If you and your kitchen crew want to make a big difference in your kitchen, Keep your Exhaust Hood System Clean.  The number one issue for you to keep your exhaust hood clean is to maintain clean filters. The filters collect the oil from the grease laden air passing threw the baffles, As the baffles build up grease and oil the harder the fan motor has to work and it then gets hot and the life expectancy of that motor is greatly reduced. By keeping the filters clean, Not only are you saving your motor, You are cooling your kitchen at the same time.  Many, Many times I have been called to a customers restaurant because there kitchen was too hot to work in. Almost every time it is a combination of clogged filters and a lack of make up air.

The Exhaust System Make Up Air System cannot function properly if the filters are clogged with grease.

To keep your filters clean, Simply take down the filters on a nightly basis and place them with the fins vertically in a large sink or tub.  Give a squirt of  Dawn Dish Detergent, And allow them to soak over night.  In the morning simply rinse them off and replace them back in the exhaust hood.  This simple 5 minute process will keep your hood system running great for years to come.

Keeping you’re hood system clean! This may sound impossible, The fact is that your kitchen personnel are the key to having a great system that will be almost maintenance free for years to come. Take out the filters every night, Place them standing on end with the fins placed vertical in the three bowl sink at close. Fill the sink full
to the top of the filters with hot water and a squirt of Dawn Dish Detergent. In the morning before prep starts rinse the filters with clear water and replace them for a new day. Be extremely cautious when purchasing a new Commercial Exhaust Hood System.  There are many sheet metal shops in the U.S. that are still making single wall stainless steel Exhaust Hood Systems that are not U.L. or ETL listed Exhaust Hoods.  Even if they are NSF approved, This is still not enough for the new code laws. We have replaced 3 new Exhaust Hoods this year that were never even hung, Because they were not properly tested Hoods.  Just a couple of years ago these Hoods were fine and were perfectly legal, This is no longer the case.  You must remember that the Exhaust Hood System is actually an intricate part of the Fire Suppression System, And must be up to today’s code requirements.

Selecting a new exhaust hood system

When you start to lay out your new kitchen, You should make room for expansion.  For instance you may only require a 8′ exhaust hood system, and may think that you are only going to use a few appliances.  An 8′ exhaust hood system will serve a 36″ range, a 24″ griddle, and one 16″ floor model fryer.  Code requires that you maintain 6″ on each side of the exhaust hood for clearance.  This would mean that your hood system has an 8″ space not being used.

Plan for the future, This combination is fine to open with, However what if you want to add another deep fryer, or even replace your 24″ griddle with a 48″ griddle.  Take a look at what you are buying, It may only cost a couple hundred dollars to up grade to a 10′ or even a 12′ hood system.  Sometimes the fans are the same unit, And you would only be buying a longer hood.  Think about it, If you are going to spend over $4,000.00 on a hood with a fire suppression system, Why not add a couple feet for about $300.00

Electrician cost concerns

We at the exhaust hood depot want our customers to be informed right from the start. Other companies will tell you that the exhaust hood package is all you need!  That is not true, We will give you the true information that will enable you to make an intelligent decision.

One of our biggest issues is the electrical controls, If you hire an electrician to wire up your hood you could spend an enormous amount of money.  This is the issue with the exhaust hood system operation.  There is a duct detector thermostat that will turn on the exhaust hood fan, And the make up air fan, If you don’t turn on the fans, But turn on cooking equipment. There is a micro switch that has to shut down the make up air in case of a discharge of the fire system.  Also the gas shut off valve if electric must shut down, As well as any electrical outlets under the exhaust hood.  In some municipalities a strobe warning device must sound if the fire system is discharged, And last but not least, If you are in a mall or shopping center, or large complex you may have to tie in to the fire and security system.

All of this can take a good electrician a full day to figure out, And he will have to buy contactors, electric switches, electric boxes, plate covers and more.  This alone could cost over a thousand dollar’s.

There is a much easier solution to all this, Simply purchase the electrical control box for your new hood, Every terminal is labeled and easy for any do it your self individual to hook this up.  This one unit will save you time and money, As well as aggravation.
